Method
Preheat & prep.
- Heat your oven to 350°F (175°C). Line an 8×8 inch pan with parchment paper.
Make the brownie batter.
- In a medium saucepan, melt the butter. Stir in the brown sugar and granulated sugar until smooth.
- Whisk in the eggs and vanilla.
- Sift in the flour, cocoa, and salt. Stir until combined and glossy.
Make the pumpkin layer.
- In a separate bowl, beat together the pumpkin purée and cream cheese until smooth.
- Add the egg, brown sugar, pumpkin spice, and cornstarch. Mix until creamy.
Assemble.
- Pour about two-thirds of the brownie batter into the pan and smooth it out.
- Spread the pumpkin mixture on top.
- Spoon the remaining brownie batter over the pumpkin layer and swirl with a knife to create a marbled look.
Bake.
- Bake for 35–40 minutes, until the center looks just set but still slightly soft.
Cool & serve.
- Let the brownies cool completely in the pan before slicing.
