Ingredients
 
 

For the brownie layer:
  • ¾ cup unsalted butter
  • 1 cup packed brown sugar
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup all-purpose flour
  • ½ cup unsweetened cocoa powder
  • ½ teaspoon salt
For the pumpkin layer:
  • 1 cup pumpkin purée
  • ¼ cup cream cheese softened
  • 1 large egg
  • ¼ cup brown sugar
  • 1 teaspoon pumpkin spice mix
  • 1 teaspoon cornstarch

Method
 

Preheat & prep.
  1. Heat your oven to 350°F (175°C). Line an 8×8 inch pan with parchment paper.
Make the brownie batter.
  1. In a medium saucepan, melt the butter. Stir in the brown sugar and granulated sugar until smooth.
  2. Whisk in the eggs and vanilla.
  3. Sift in the flour, cocoa, and salt. Stir until combined and glossy.
Make the pumpkin layer.
  1. In a separate bowl, beat together the pumpkin purée and cream cheese until smooth.
  2. Add the egg, brown sugar, pumpkin spice, and cornstarch. Mix until creamy.
Assemble.
  1. Pour about two-thirds of the brownie batter into the pan and smooth it out.
  2. Spread the pumpkin mixture on top.
  3. Spoon the remaining brownie batter over the pumpkin layer and swirl with a knife to create a marbled look.
Bake.
  1. Bake for 35–40 minutes, until the center looks just set but still slightly soft.
Cool & serve.
  1. Let the brownies cool completely in the pan before slicing.
